This is an extremely special wheel of cheese made with raw milk from Shelburne Farms and then aged at Jasper Hill. They make only 120 wheels of clothbound cheddar each year. After 2 months in the coolers at the Farm, it is transferred for affinage (aging) to the Cellars at Jasper Hill in Greensboro, Vermont. There the cheese is wrapped in cloth and expertly cared for until it develops to peak flavor and is brought back to the Farm.
Each wheel is made using the traditional English process of aging wheels of cheese wrapped in cloth and sealed with lard.
Tasting Notes: bright beginning, beefy broth notes, hinted of salted caramel, herbaceous finish and good texture
