Hot Cheese + Skin Contact Chard

Wine Tasting Notes:

Vineyard: Organically farmed Wente Clone Chardonnay from The Beto Vineyard in Redwood Valley, Mendocino County. 3.92 tons were harvested on August 17, 2021.

Vintage: A dry winter with below-average rainfall and a cool start to spring kept the vines dormant late into March. The spring months stayed dry and cool, slowing shoot growth and contributing to low yields and small berries. Once under full canopy later in the season, the fruit developed evenly with concentrated flavor, color and texture. Harvest began on August 13th with favorable, temperate weather throughout the picking season.

Cellar: 100% destemmed berries went into one open top stainless-steel tank. Grapes were punched down two times per day throughout fermentation. After 21 days of skin contact, grapes were pressed. The wine aged in stainless steel for 6 months prior to bottling.

Style: Skin-contact white / orange wine.
